I'm back with Day 2 of a week of sorbet + booze concoctions. Today's drink is a classic with a bit of a twist.

Day 1: Champagne with Grapefruit-Elderflower Sorbet
GIN and TONIC with CUCUMBER-LIME SORBET
Cucumber-Lime Sorbet
Ingredients
1 Cucumber
2 cups Water
3/4 cup Sugar
1 tbsp Vodka*
Juice of 1/2 Lime
Directions
Peel and cut cucumber in half lengthwise and spoon out and discard the seeds.
Finely shred one half and grate the other half of the cucumber.
Combine sugar, water, and grated cucumber in a saucepan. Stirring frequently, dissolve sugar in water over medium-high heat to create a cucumber-infused simple syrup.
Once dissolved, allow simple syrup to stand for 5 minutes, and then strain into a bowl.
Chill mixture until cool
Ingredients
1 Cucumber
2 cups Water
3/4 cup Sugar
1 tbsp Vodka*
Juice of 1/2 Lime
Directions
Stir in the lime juice, vodka, and finely shredded cucumber.
Freeze in ice cream maker according to directions.
*In this case, the vodka serves a very practical purpose. It allows the sorbet to keep a nice, slushy texture without freezing into an unmanageable block of ice.

2 scoops Cucumber Lime-Sorbet
1 part Gin
3 parts Tonic
Directions Stir gin and tonic together in a Collins glass and drop in two scoops of sorbet. Garnish with a slice of cucumber.
*In this case, the vodka serves a very practical purpose. It allows the sorbet to keep a nice, slushy texture without freezing into an unmanageable block of ice.
